Special Order Mahi

Dan’s Uncle was in town and we walked around campus reminiscing with him about this and that. He was a gator 20 years ago.  We stopped by the swamp to put our feet up for a bit and found a nice shady reprieve.

For some reason, I felt compelled to special order 5 fillets of mahi last time I went to publix and I picked them up today.  $40, burn!  I was under the impression more people would want dibs, but it was just Dan and me.  The good ol’ classic pecan crusted mahi.

  • 2 Mahi fillets
  • 1/4 cup pecans, chopped fine
  • 1/4 cup plain bread crumbs
  • 1/4 cup flour
  • 1 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 egg
  • 1/4 cup milk

The Dry Rub

In 3 small bowl, combine the above ingredients, dip the mahi in 1, 2, 3 . In a medium pan, on medium heat, cook the mahi for about 5 minutes each side.

Served with green beans and blank stares.
