London Broil

Best deal on I could find this week on meat was for this 2 pound slab of top round London broil.  Decided to go with a dry rub on this one and it turned out quite flavorful.  Next time, I would use a little less chili powder and a little more garlic powder.

  • 2 lbs top round London broil
  • 2 tbs chili powder
  • 1 tbs garlic powder
  • 1 tbs oregano
  • 1 tbs paprika
  • Few pinches of salt
  • Many turns of the pepper grinder

The Dry Rub

In a small bowl, combing all the spices and mix thoroughly.  After pounding the meat for a while, place it in a dish and coat it with about 2 table spoons of olive oil (this is so the dry rub will stick). Dump half the spices on top and rub it in vigorously, flip it and do the same.  This will create a nice crust on the meat.

With the grill on 325 degrees, allow to cook for about 7 minutes each side.  Cover the slab in tin foil (or close the lid if your grill has one).  This will speed the process a little.  Take off the grill and allow to cool for a few minutes, then cut the meat at a 45 degree anger to the plate.

Served with green beans and good laughs.
